Pairs great with a Bonanza rerun

Serves 2
Ingredients:
4 small flour tortillas (or 2 medium)
1 cup shredded cheese (I used Gouda)
1/3 cup chili (optional)
1/3 cup salsa
1 tsp butter
Cooking:
Preheat oven to 400 degrees F.
Rub butter on cast iron skillet or baking sheet.
Assemble quesadillas. Divide ingredients equally, layering cheese, chili, salsa and cheese on half of each tortilla before folding in half and placing on buttered pan. Double for medium tortillas. Try to avoid overpacking.
Bake 10 min. Flip and bake additional 10 minutes, until top is golden brown and filling is bubbling.
Let cool 5 min on baking surface. Slice into wedges and enjoy with salsa, cilantro, guacamole or other toppings of your deepest desire.
