Chicken and Rice Casserole

A good reason to rob the hen house




Ingredients:


The Rice:

1 cup rice

1 1/2 cups chicken stock

Juice of 1/4 lemon

1 tsp salt

1/2 tsp cumin

1/4 tsp curry

Pinch of black pepper


The Rest:

1 1/2 cups cooked chicken, shredded

2 celery sticks, chopped

1 cup shredded cheddar cheese

1/2 medium onion, finely diced

1/2 can cream of mushroom soup

1/2 bottle of beer

2 eggs, beaten

2 cloves garlic, minced

1 tsp cilantro

1 tsp salt

Pinch of black pepper


Cooking:


Preheat oven to 365 degrees Fahrenheit.


Combine "The Rice" ingredients in a pot and stir cold ingredients to mix. Cover and simmer for 15 minutes, until most water is absorbed but rice is still slightly firm.


Set aside 1/2 cup of shredded cheese and combine the rest of the ingredients in a casserole dish. Top with remaining cheese.


Cover with foil and bake for 35 minutes. Uncover and bake an additional 10 minutes.
