Ingredients:
1 bunch collard greens
1/2 cup cooked ham or bacon, diced
1/2 onion, diced
2 tbsp olive oil or butter
1 tbsp sugar
2 tsp salt
1/2 tsp pepper
3 tbsp apple cider vinegar
2 cups beef broth
Cooking:
Melt the oil or butter in a large pot over medium heat. Add diced ham and onion and saute until onion is translucent, about 5 minutes.
Meanwhile, rinse collards and chop into 1 1/2 inch long strips. You can discard the stalks if you'd like.
Add collards, broth, vinegar, sugar, salt and pepper to the pot with ham and onions. Stir until collards begin to shrink and become dark green in color.
Cover and move to lowest heating burner. Cook on low for 1 hr or longer.
