The spice of life is closer than previously thought
Hands on: 20 min
Hands off: 15 min
Ingredients:
1 London Broil beef steak
4 bell peppers, sliced into fajita size
1/2 tbsp butter or oil
Marinade:
2 medium onions, cut into 1/4" wide strips
5 cloves garlic, crushed
2 tbsp hot sauce or pepper mash
1/4 cup cilantro, finely diced
1/2 cup orange juice
1/4 cup apple cider vinegar
2 tbsp soy sauce
2 tbsp Worcestershire sauce
1 tbsp Liquid Smoke
1 bay leaf
1 tsp chili powder
1 tsp cumin
1 tsp paprika
Dash of pepper
Cooking:
Slice meat into 1/4" thin strips. Combine with marinade ingredients in gallon bag. Refrigerate and let marinate for 2-12 hours (longer marinade time will result in more tender meat).
Heat 1/4 tbsp butter or oil in pan over medium-high burner. Remove steak and onions from marinade, saving leftover, and add to pan along with sliced bell pepper. Saute to achieve deeper color, about 8 minutes, stirring regularly.
Turn heat to low and add 1/4 cup remaining marinade and bay leaf. Cover and cook for additional 15 minutes, stirring occasionally.
Serve on warm tortillas and top as desired with fresh cilantro, salsa, guacamole and shredded cheese.
