Meatloaf

Meatloaf - a classic meal that can be crafted easily to feed a crowd with no curfew. Hearty, rich and dense with proteins - this meatloaf recipe follows through on these promises with honest, full and flavorful soul.



Hands on: 15 min

Hands off: 50 min



Ingredients:


2 lbs ground meat (I used 1 lb bison and 1 lb beef)

1 medium onion, diced

1/3 cup bread crumbs

3/4 cup ketchup

2 tsp salt

1/2 tsp black pepper

3 eggs

1/2 block cheddar cheese, cut into 1 inch long pieces

- (can substitute with shredded cheese; mix in with other ingredients and top before baking)


Cooking:


Preheat oven to 365 degrees Fahrenheit.



Combine ground meat, onion, salt, pepper, bread crumbs, eggs and 1/4 cup ketchup. Work with hands until well mixed.


Place mixture in 8” cast iron pan or baking dish and press down uniformly to remove air.


Push cheese pieces down into the mixture, evenly spread throughout the loaf and spread rest of ketchup on top.


Bake uncovered for 50 minutes.
