Ingredients:
5 lbs chicken wings
2 tbsp Dijon mustard
4 tbsp olive oil
2 tbsp hot sauce (Texas Pete or comparable)
2 tsp brown sugar
2 tsp cumin
2 tsp paprika
2 tsp chili powder
1 tsp ground mustard
1 tsp Worcestershire
1 cup apple wood chips
Cooking:
Combine wings and other ingredients in a gallon bag. Let marinate for 2 hrs refrigerated.
Meanwhile, soak wood chips in water.
Preheat smoker to 225 degrees F.
When smoker is preheated, remove wings from fridge and let sit at room temp for 15 min.
Add wood chips directly to a corner of the coals in smoker and place wings directly on the grate. Smoke for 2 hrs, flipping halfway.
Those wings were fantastic......I only had one as a hold-me-over..... can't wait to enjoy them again - great recipe.
