Ingredients:
2 lbs mussels
2 bratwurst or sausage
4 cups fresh tomatoes, diced or crushed
1/2 cup chicken stock
1/2 cup black olives, pitted
1 medium onion, diced
3 cloves garlic, crushed
1 jalapeño, finely diced
1/4 cup sour pickle juice
4 tbsp butter
2 tbsp honey
2 tsp hot pepper flakes
1 tsp cumin
1 tsp fresh sage
1 bay leaf
1/2 tsp black pepper
Juice of 1/2 lemon
Hot sauce to taste
Cooking:
Cook sausage, preferably smoking. Cut into 1/2 inch pieces.
Melt butter in large pot over med-high burner. Add onion, olive oil and 1 tsp salt. Saute until onions begin to brown pan and add 1/2 cup white wine, scraping the pot to deglaze. Saute until half of the liquid has evaporated.
Add stock, tomatoes, sausage, olives, garlic, jalapeño, pickle juice, lemon juice, honey bay leaf and spices. Stir, cover and simmer on low burner for 1 hr.
Add mussels, ensuring all are submerged in sauce. Recover and simmer for 30 min.
Serve over noodles if desired.
Tip: Smoke tomatoes for added flavor - cut in half and place skin side down on grill grate for 30 min.
