Ingredients:
2 28 oz. cans diced tomatoes
2 1/2 cups red wine
1 large onion, diced
3 cloves garlic, minced
4 tbsp olive oil
3 tsp sugar
2 tsp basil
2 tsp thyme
2 tsp oregano
2 tsp salt
1/2 tsp pepper
1 medium bay leaf
1 1/2 tsp tomato paste
Cooking:
Heat oil in pot on stove over medium heat. Add onion and garlic. Sauté 5 minutes or until onions are translucent.
Turn heat to medium-low. Add spices, salt, pepper and tomato paste. Stir for 2 minutes until combined.
Add 1/2 cup red wine and scrape coating from sides of pot to create a sauce.
Add diced tomatoes, 1 cup red wine and sugar. Stir well and cook uncovered at a barely-simmer over low to low-medium heat for 1 hour, stirring occasionally.
Taste and add salt and pepper to taste. Add 1 cup red wine to your delight. Cover and cook over lowest burner setting for 2-3 hours.
