Tortellini Alfredo with Spinach and Salami

Ingredients:


1 package tortellini

1 1/2 cups milk

1 cup fresh spinach, chopped

1/2 cup shredded cheese (Gouda, Cheddar)

1/4 cup hard salmi, finely sliced and cut into 1/4" wedges

2 cloves garlic, finely minced

3 tbsp butter

5 tbsp flour

1 tsp sugar

Pinch salt

Pinch pepper

Olive oil


Cooking:


Prepare tortellini al dente. Drain and return to pan over unheated stove and toss with 1 tbsp oil. Cover and let sit while sauce is prepared.


Place separate pan over low burner and melt 3 tbsp butter. Whisk in 1 tbsp flour and pinch of salt to form a roux. Add minced garlic, shredded spinach and another tbsp flour. Stir until spinach is coated.


Add 1 cup milk, shredded cheese and diced salami. Raise heat to low-med and stir for 5 min.


In separate bowl, whisk together remaining 1/2 cup milk, 2 tbsp flour and 1 tsp sugar. Combine with sauce, stirring for another 5 min.


Add tortellini to sauce and mix. Enjoy warm.
