Tzatziki Sauce

Cool cucumber, the zest of salt-ground garlic and soft tones of Greek yogurt create a palate of sun bleached city buildings and crisp sea air in this versatile Mediterranean sauce

Ingredients:


16 oz. plain Greek yogurt

1 1/2 medium cucumbers, seeded and diced into small cubes

Juice of 1 lemon

4 cloves garlic, crushed and finely minced

2 tsp coarse salt

1/2 tsp pepper

1 tsp fresh dill, chopped


Cooking:


Peel and remove inner seeded part of cucumbers. Dice into 1/4 inch cubes.


Crush 4 cloves garlic. Mince finely and sprinkle with 2 tsp coarse salt. Grind into the garlic with flat side of knife until juices run.


Combine diced cucumbers, salted garlic, chopped dill and Greek yogurt in bowl. Add pepper and lemon juice. Mix until well combined. Cover and refrigerate for 1 hr to let flavors blend.
